Fiaschetteria Toscana – Venice

The last time we were in Venice we came across Fiaschetteria Toscana by chance and liked it so much that we went back the next night. The clientele was mostly local then; now it is mostly tourists, as its reputation has spread, but there were Venetians the evening we were there, May 18, 2007, including two tables with well-behaved small children. Despite the name, it has nothing to do with Tuscany; it is a fish restaurant. aft1.jpgWe were served a glass of prosecco right after we sat down, a custom which used to be more universal in nice northern Italian restaurants and which seems very civilized to me. We had considerable discussion with the friendly and patient waiter about our choices. We also ordered a bottle of 2004 Podium Verdicchio Classico Superiore (Garofoli) (white) from the Marche and a half bottle of Felsina Chianti (red.)

Linda started with the granzeola, the local spider crab served in its own shell with some crab roe on top. It was just that; it did not need enhancements and was delicious.

I started with a salad with three generous chunks of lobster, asparagus strips and a light tomato aspic.

We then shared a risotto of sea bass and prosecco. It was very good in a somewhat austere way. The rice still had crunchiness in the middle, as is traditional in Venice.

Linda’s main course was frittura di moeche, or the local soft shell crabs, deep fried in a light batter.

Mine was lots of little fried scampi. Both of these, which we shared, were served plain with a few young salad greens: no lemon, pepper, olive oil or whatever. The cuisine was almost zen. Perfect ingredients, directly prepared and served. Michel Bras would approve. It worked for me. But it was all in a relaxed, Italian ambience. Well, not just Italian: we chatted with the English couple on one side of us and the French couple on the other side who ordered the big grilled lobster, served just with some apple slices.

I finished with a passion fruit mousse. 

The bill was only 188€ for the four excellent courses, plus wine. They were turning over most of the tables for later diners and they had opened an area across the street with about six tables, so they are doing well. All the staff seems to speak four languages, at least. They deserve a Michelin star. But the success has not lowered their quality or their welcoming ambience at all.
